Microwave Monday: Special Valentine’s Day Edition!

So it’s the day before Valentine’s day. What do you have planned? A romantic evening with your honey? A romantic evening with your imaginary honey? Either way, food is the best way to make people smile. Impress your lover or even yourself with this SUPER easy microwave mug brownie recipe!

Everyone loves brownies (and if you don’t, I’m questioning your sanity). This recipe makes enough for 2 people! And if you’re spending your Valentine’s Day with your imaginary sweetheart, don’t worry, we won’t judge you for eating two brownies 🙂

What you will need:

2 Mugs, about 4 tablespoons of semi-sweet chocolate chips/chunks, 2 tablespoons of butter, 1 egg, 4 tablespoons of sugar, 2 tablespoons of flour

You’re going to be dividing your ingredients in half. Half will go in one mug, and half in the other.

First you’re going to put 1 tablespoon of butter and 2 tablespoons of semi-sweet chocolate chips in each of the microwave safe mugs. Microwave only one mug at a time for 40 seconds, or until the chocolate and butter are melted and smooth- no chunks!

Next, combine  the rest of the ingredients, splitting them- half into each mug. For the egg, make sure to scramble/beat the egg before putting it in the mug (again, half of the egg into each mug).

After all ingredients are combined, and mix has been stirred until smooth, put each mug into the microwave separately for about 1 minute (sometimes it takes a little longer depending on what kind of microwave you have, so check it before eating!)

FINALLY!!! You finally have 2 delicious brownies to chow down on. My professional chef suggestion is to pick up some vanilla ice cream to go along with it! Keep them for yourself or share them with a lover- either way you’re going to be eating something delicious, easy, and homemade tonight!
